Why do we offer this to you ...
We found a hole in the wall through our friend Andrea Innocenti and we just wanted to buy fennel salami. However it turned out that this farmer also produces some really nice non standard wines that we really enjoy.
We met Riccardo Rosati and even though he was in the middle of the harvest he took his time and conveyed his passion for his wine to us. In fact he loves this vintage so much himself that he didn't want to sell this vintage :-)
As most of our wines all is done by hand for the Stiglianese.
What does it taste like ...
The wine has a very deep ruby red colour.
Pre dominantly you will smell black cherry and chocolate but it is not missing the classic Tuscan earthy flavors. The taste shows a lot of ripe plum and red berries but it also has a strong presence of spices which is nice with the strong tannins this wine provides.
However the wine is smooth and round and makes you enjoy its long finish.
The wine is now fully matured but good to drink for another 6 years.
We love this wine with a young parmeggiano or a strong meat dish.
What is it made of ...
100% Sangiovese
Gently crushed to protect the seedsthe wine is fermented at a controlled temperature below 28°C.
Macerated on the skins for 15 days.
Ageing in small, 225-litre Allier oak barrels for at least 15 months.
Bottle ageing for at least 6/8 months.
